For building/truing wheels on any bike, I would highly recommend
Perfect Wheels on Roosevelt.

In particular, I have known a number of persons in ETC who have had newly built wheels built by R&E that rapidly lost tension. (I saw one of them firsthand where the spoke nipples were finger tight after only 200 miles.) There are a number of standard things that wheelbuilders do to stabilize, correct alignment, and relieve tension while building wheels, so it is very hard to understand these reports about R&E. But, I have heard them from at least 3 tandem riders, and as I said, I saw one of them firsthand. So, if I were you, I would be fully prepared to adjust and maintain the wheels yourself during your tour.
